そんな中、ある研究者が「甘くない糖」を開発してしまったのである。

上司は当然、「どうするんだそんなもの」と聞いた。けど、研究者に「こいつは売れる」という確たる感触があるわけではない。ただ「面白そうでしょ」というだけなのである。それでも上司は研究の中止はさせなかったようだ。そしてめでたく、甘くない糖は製品として完成する。いよいよ量産、発売ということで、今度は役員会にかけられた。幹部たちも一様に「どうするんだそんなもの」と首をひねったが、「やめとけ」とは言わなかったらしい。スゴい人たちである。

結果は大ヒット。和菓子などのメーカーなどから矢のような注文が殺到し、幹部たちはあんぐり口を開けてその報告を聞いたという。消費者は「甘さ抑え目」を好むようになってきた。菓子メーカーとしてはこの要望に応えなければならない。けれど、甘味を抑えるために砂糖の使用量を単純に減らせば、テリがなくなったり本来の食感が損なわれたりしてしまう。そこでこの「甘くない糖」が引っ張りだこになったというのが、そのカラクリだった。
